What is the best way to freeze zucchini and can it be dehydrated?

I am looking for ways to freeze or save zucchini until next season.. I would love as many ideas as possible! Thanks!

    You can freeze it. The best way to preserve the color and texture is to blanch it first. Cut the zucchini in whatever size pieces you will want to use later. Bring a pot of water to a boil, and boil the cut zucchini for a minute or two. They should be only beginning to soften, not as soft as you would typically want to eat them. Then drain and rinse with cold water, and ideally freeze them first laid out on a cookie sheet, so then when you bag them they won't stick together as much. I have not personally dehydrated them myself, but I buy them that way, and they are wonderful. It works best when they are sliced or cut in thin sticks.     I love raw zucchini with dip and in salad but not as much cooked but we grate it and freeze it for zucchini bread and it will keep for at least 6 months or more in a zip lock freezer bag - I usually let some of the liquid drain out before freezing but don't worry if some liquid is left.

    The only way to safely freeze zucchini and minimize risk of it spoiling or developing botulism is to steam or boil it for 3 minutes.
