How to Preserve Berries

It's berry season and these plump jewels are plentiful! But, they don't last long in the fridge or at room temperature so you've got to do something fast.
Here are some ideas for preserving berries so you can enjoy their sweet goodness year round.
Eat lots of them. Ok, so that's not preserving them for later, but they're so good for you that I can't think of a reason not to eat them.

You can straight up can berries or later, or you can make berry pie fillings, jams, jellies and preserves.

Of course freezing berries is pretty simple. But, what about freezer jelly or frozen pies and cobblers ready to thaw and serve?

Drying berries is another great way to preserve the harvest and it takes up a lot less space than canning and freezing. These chewy goodies can be snacked on, used in oatmeal, or reconstituted for use in pies and muffins!

    Right now I have 14 quarts of frozen blueberries and we will be picking lots more! In winter when weather isn't the greatest here, I will make vinegar, liqueur, muffins, buckle, pancakes, etc.
