Serviceberry Lemon Balm Jam

Serviceberries, sometimes called Saskatoons, grow wild and abundant in my area. They're not as highly prized as huckleberries but tend to grow in areas closer to home making it easier picking during busy homesteading summer days. Combine the berries with lemon balm from the herb garden for a tasty jam to enjoy all year long.
Pick dark berries for the ripest, sweetest flavor and crush in a pan with some lemon juice, water, and sugar. Mash slightly and simmer until gel point is reached, about 20 minutes.
After gel point is reached, toss in some freshly washed and chopped lemon balm.
