What should I do with this bedroom closet? The rest of the room is being used as an office.

leave the hanging rod if it is not in the way. It would be good if you can get electrical power to this area, either by having a plug put in or runninga heavy electrical cord from an existing outlet (if this is to be permanent for a while, go for a new outlet). Then measure and put in a desk top out of an old door or some reclaimed lumber. You can cut a small indention in the center for room for the chair to slid into the closet...chose a chair that is not too bulky. Shelves can be put ...»
down the sides for equipment using bracing and gliders so shelves can pull out. A set of cubby holes can be placed under the cabinets for paper, etc. This should not cost much as pallet wood can be used for the cubby holes. Baskets are good for storage on shelves and a coffee cup makes a great pencil holder. Finish this off by putting up a curtain to hide your junk. (A plain white shower curtain is the easiest way to conseal this! These things look great finished but in a short time, they are messy! You do not want to look at it.

What will you be putting in here...or do you think it will be empty and unused most of the time? I'm not sure if you are asking for organizational tips or about turning the closet into something else. Your floor is beautiful.

I use one of our bedrooms as my office, all the kids and grandkids are not allowed in, unless invited to protect "office stuff", and because of that I use mine to store Christmas and birthday presents! It's the only room in the house that is "safe" from prying eyes. You could put file cabinets in there for paper storage, or just general storage as well.

At first I was thinking of building a desk inside of the room that would be hidden if the door was closed. But my Lazy-Boy recliner is sort of in the way of the space. My thinking now is to use it as storage, perhaps as a hideaway for filing cabinets.
