How to Make Herbal Oils

Herbal oils are a great way to use of the last of your Summer herbs and make great gifts for the holidays! I have been preparing them for several years now and thought I would share my favorite recipe. You will need a large container of the oil you prefer. I used extra virgin olive oil, the 51.5 ounce size. You will also need several decorative decanters for storing and of course plenty of fresh herbs which need to be washed and air dried prior to preparation. I used about 3 cups of fresh Thyme.
First heat the oil on low, it needs to be hot but not boiling.
Next, remove the oil from the heat and add your herbs. Don't worry about cutting them--just add them in bunches.
Now, cover and let the herbs soak in the warm oil. I let mine infuse overnight. Strain the oil before pouring into bottles. Decorate with ribbon or tags as desired, then store in a cool, dark place. I like to wrap mine in wine bottle bags for gift giving. Do you enjoy making handmade gifts? I would love to hear your comments!
