My sister does this all the time, and actually gets edible pineapples.

It's been done here in the valley before and the ladies say it produces fruit. So I thought I try. Don't expect fruit right away about a little over 24 months. I'm not going anywhere not that I know of. Other plants are of strawberry.

I've done this several times over the years. Never got any fruit, but got a few new offshoot plants.

Reminds me of my mother. When she bought a fresh pineapple, she would cut the top off about 1-1/2" from where the green joined the fruit and then burry that 1-1/2" below the dirt in a bit pot. She would actually get a pineapple up on a stem! I don't think any of them ever matured, but we all thought it was exciting!
