Preserving Fresh Basil From Your Garden (in the Fridge!)

This is a home & garden website, right? I thought gardeners may want to know how my Italian Aunt stores her fresh basil. I was shocked when my sister-in-law told us. She puts it in a glass jar with olive oil and salt. Have you ever heard of such a thing? You have now! Your basil will keep it's flavor for months this way.
Now don't get all "quagulated" on me. I know olive oil solidifies in the fridge. It also goes back to normal after it's at room temperature, or it warms up. When I use mine in sauces, soups, etc. I plan on spooning it out of the jar and letting it sit out at room temperature before I use it.
