    Phyllis, judging from your profile picture, I am assuming you are talking about planting vegetables. North Carolina has an abundant "second season," when cool-season vegetables like carrots, broccoli and cauliflower produce their best flavor and quality.     If it's your vegetable garden- a great time to grow greens and salad, spinach, kale, mustard greens, chard, arugula, if you want perennials (flowers) asters, chrysanthemums, ornamental grasses.
