Root cellar

Does any one know how to make a root cellar and if you can do one in North Carolina and will it still serve it's original purpose? Or is there something else I should try

The root cellar on my property is pushing 100 years old. It is a 10x10x6 foot hole in the ground with shelving and an area for things like apples, potatoes. The ceiling of this is the floor of the shed with a door in the floor and the stairs into the cellar. The shed which is the covering for it is for whatevers...So in reality...it is a shed with a dirt basement and it has been through a flood in 1959 and still survived as far as the cellar's walls and such.
