Turkey-less Thanksgiving

Turkey may be the most famous dish on your table, but it can account for as much as 40% of the meal’s cost! Wowza. Whether you're vegetarian, vegan or just frugal, here are some delicious (and hearty) dishes you can enjoy at a turkey-less feast:
Wild Mushrooms.

These wild mushroom bread puddings pack a whole lotta good into a little bowl. That’s right, they’re individual-sized portions, so you’ll be able to skip the “Susie has more than me” argument this year! Plus, they’re savory, filling and made from bread. Unfortunately for vegans this recipe does contain butter, eggs and cheese, but there isn’t any meat, so vegetarians – enjoy! Check out The Curvy Carrot for the full recipe.
Vegan Chorizo.

Vegetarians, vegans and meat-lovers alike will dig this delicious vegan chorizo chickpea salad. It may be called a salad, but don’t confuse this bad boy with some meager, wilted lettuce disguised by a dash of dressing. This salad is filling, meaty and delicious. Visit Paint and Tofu for a full recipe.
Winter Squash.

Sweet corn and tomatoes may be all the rage during the summer season, but our cold-weather veggie of choice is winter squash. Spaghetti, acorn or butternut. There isn’t a bad option out there and we don’t pick favorites. This roasted butternut squash recipe with sweet spices, chili and lime will please even the squash-haters that show up at your Thanksgiving table. The ingredients in this Kitchen Konfidence recipe are easy to find and inexpensive.
Hearty Lasagna.

Who doesn’t love Italian food? On this very American holiday, embrace our country’s diverse culinary culture with these simple, easy-to-make lasagna roll-ups from Cooking Classy. They’re easier to make than layered lasagna, not to mention easier to dish up! This recipe makes enough lasagna for 12 hungry people, which makes it perfect for a big Thanksgiving feast.
