DIY: home canned Organization

I do a lot of home canning. This is our room and how I keep it looking nice. I had a picture in my head of what I wanted and my hubby understood and built it for me. I just LOVE it. I have abut 800 jars of home canned things in here and it still looks nice. Since this picture was taken though I asked hubby to put a board across the fronts of each shelf. Just in case we should have a tremor some day. He did, it looks great to now that I have painted it.

    Wow, that is a lot of canning. And it looks great. So do you get through 800 jars of canned goods each winter or do you give some stuff away?

    Our daughter and granddaughter love home made jelly and applesauce. They take some home every time they come visit. I also mail some to them. Home canned items last longer than one year. I don't worry about things. After 2 years they do lose some nutrients but are still quite edible. I buy very little in the way of veggies at our house. I try and grow most. What I don't grow I get from local farmers (not farmers markets).

    That's fantastic. What part of the country are you in?

    Also, I realized that many canned goods last longer than a year. I was asking about the year because I assumed you would start over with a bunch more new vegetables with each growing season.

    I live pretty much dead center. Close to KC. I do canning each yr. I am just real good at rotating and marking my lids. I also rotate the things I grow. If I have enough one thing canned for a couple of yrs the following yr I plant something else and stock up on that.

    Right now that wooden box is full of fresh sweet potatoes from a local farmer. They look wonderful this yr.

    So impressive.....just beautiful....What hard work and discipline. My grandmother did a lot of canning, mostly fruits and jams.

    Fruits and Jams because I bet she didn't have a pressure canner. A lot of people are afraid of them. I used to be. Also they can cost quite a bit. For veggies and meat you have to have one though. Any item low in acid has to be pressure canned. She was doing Water bath canning. I do both. Water bath canning is to me,,faster and easier. My Grandma did it to. But I have learned pretty much on my own. Books and trial and error mainly.

    This is so awesome...If I did not live at 8500 in the frozen mountain I would be growing lots of stuff too...our season is just too short. My mom's parents were big time gardeners and canners their "root cellar" was about the same size as your pantry but dark and scary by comparison.

    Joan that is impressive, I can too but not to that magnitude.

    Your husband sounds like mine, I come up with the idea and he brings it to fruition. I call myself the eyes and him the hands, when it comes to a project. :)

    So far this is the only room in our basement that is done. Maybe one day soon we will have the rest finished. I'm looking forward to it. I have canned so many tomatoes this year that I am sick of looking at them. I have one more sink full waiting for me to do in the morning. The rest of what I have is going to go out to the chickens tomorrow. Once I'm finished canning tomorrow I'll be making banana bread.
