Canning Your Summer Produce in the Winter

If you're like me, summer time in the garden can get hectic. Being able to put some of that produce in the freezer and dealing with it in the winter, can be a time saver.
Take dried beans, for instance. They are one of the easiest vegetable to grow and harvest. After you harvest, you can put your beans in a Ziploc bag and pop them in the freezer. When the weather turns cold and snowy, get them out and can them. Couldn't be easier.
I use a pressure cooker/canner for this. These can be found at hardware stores, feed stores, and big box stores. You will also need a large stockpot, canning jars, lids, rings canning salt, glass measuring cup and a jar gripper. A good canning guide is also nice to have and I've used this one for years.
