A simple trivet works great to hold the slips upright in a bowl of rainwater!
This can work over a mason jar too..
After you snap the leafstems off place the potatoe back on its water jar and grow some more!

    I have a sweet potato in a mason jar (like photo). It's been in my kitchen window three weeks and I have added water twice. How long before I see any growth?

      I only put sweet potatoes like this in a mason jar of water otherwise it seems like you will wait forever for the slips to grow
