What's this weed?!!

This weed grows in my garden as if I planted it. It has pinkish/reddish roots. It's fairly easy to pull but grows fast and thick. Is it an edible weed?

    Yes-it is Amaranth and considered a weed. Specifically it looks like Amaranthus retroflexus aka Red Root Amaranth. Another name for it is Pigweed.

    Weeds weeds everywhere and as much as I pull them out it feels like I am pulling as much hair out of my own head. There just never seems to be an end in sight. And this from a woman who has been gardening for decades. At least you got the whole weed to show most importantly you got the ROOT. In the middle Atlantic region, it is called everything from Pigweed to a weird ginger weed. Mine grows in clumps and no matter what I do they always return. Yours though has much wider leaves but weed it is regardless. One method I have come to rely on when pulling deep rooted weeds is to drop down into hole I just pulled it out of is to pour vinegar straight down into the growth from once it came this has had long term effects with regards to the weeds not returning. Be careful and only use enough to fill hole then walk away.Good Luck, and may your weeds not return.

    Pigweed a member of the amaranth family. Cook it like Swiss chard when it's young
