Painting: Painting bathroom walls that had wall paper on unpainted drywall.

The walls are not too bad but bad enough that I do not like it. I used a light colored satin paint, will sponge painting or any other technique work to help cover the flaws that still exist?

Electrical & Lighting: Exhaust ceiling fan switch, can I put a normal open close switch rather than a variable switch?

I never have it on low, I either have it full blast or not at all

Home Maintenance & Repairs: Replacing a variable switch with an on/off switch for an exhaust fan?

I either have it on full blast or off, is this an bad idea to go to a on/off switch?

If this switch is a "variable" control and not a fixed "3 speed" switch then you should be ...»
fine. Multi position switches have multiple "leads" that go back to the motor and energize more areas of the "coil" in the motor itself. This imparts a higher field (the elctromagnets that cause the motor to spin) and there by change the speed.

In a variable switch the current is "adjusted" in just a single "winding" of the motor to control the speed.
