Replacing a variable switch with an on/off switch for an exhaust fan?

I either have it on full blast or off, is this an bad idea to go to a on/off switch?

If this switch is a "variable" control and not a fixed "3 speed" switch then you should be fine. Multi position switches have multiple "leads" that go back to the motor and energize more areas of the "coil" in the motor itself. This imparts a higher field (the elctromagnets that cause the motor to spin) and there by change the speed. In a variable switch the current is "adjusted" in just a single "winding" of the motor to control the speed.
