In my experience there is only one sure-fire deer-proof shrub for shade, and that is andromeda (Pieris spp.). They bloom in early spring with lovely lily-of-the-valley type flowers. As long as you don't have investigative children around, interplant them with perennials like foxglove and monkshood, which are poisonous to deer (and others that eat them).
