It kept watching and moving around the bamboo as I moved around to take pictures!

    It looks like some species of the grasshopper family.....the tobacco spitting type, maybe. It looks as though it's munching on the bamboo.

    it's a lubber grasshopper Romalea microptera aka Georgia Thumper They eat plants like crazy. If you have bunches of them, spray a garden insecticide for control.

    my first thought is a grasshopper, locust or a cricket... insects are something I am not very educated on.
