Where is the shiplap -- bathroom, LR, BR? What color is it? Why do you have it? I ask why because if you want it to be the center of attention you might want eggshell, satin, or semi-gloss. If it is a backdrop for art or other items then you might want matt/flat. It all depends on...

That is your own personal taste. I would consider the surroundings before you make the decision.

I like Eggshell finishes. It you plan to wipe up the surface it cleans better.

Your personal choice is the key. I wouldn't want high-gloss as it could be too bright in a sunroom, and flat/matt would be too drastic there, so I think my choice would be the eggshell. Why not paint a couple of poster boards with your color choice in the different sheens to see which you prefer? I'm sitting here looking my poster board of the colors I'm trying to decide upon for my kitchen repaint. The board helps because I can see the colors a different times of day and other lighting changes to see how my choices look.
