Don't be intimidated about cooking a whole pumpkin. It is easy! Ours is so soft, we never have to do more than just scoop it out and freeze in one cup quantities. It will be ready to use, just like canned. One cup is the equivalent of what is needed in most recipes.

If you cook it whole, before scooping out the seeds, MAKE SURE TO VENT!
Time to break down the autumn display! Also time to save some produce!
Or you can scrape out the seeds and cook them separately.
Cut side down in a little water. DON"T FORGET TO VENT!
When a knife goes in easily, they are ready. Cool and scoop into 1 cup portions. We freeze ours in zip-closed baggies that can be flattened to stack in the freezer.
