Tomatoes can be ripened in brown paper bags kept in a warm dark area in the house. Other than that I am not sure if you can ripen much if your season ends too soon.
LOL yeah I tried growing tomatoes in Banff once an epic fail. I would put maybe plastic hoop tent over them, and in the sunniest area. Also those tomato fertilizer spikes work wonders.
