You may have voles. There are several ways to discourage them, but then you risk sending them to your neighbor's yard; not so good. If you can find the opening where they exit their just-under-the-ground tunnels, you can set a mousetrap there, cover the mousetrap with an inverted flowerpot, and put a brick on the flowerpot (to keep neighborhood pets out). You can also just put poison down the hole (available at farm/home/garden stores). Voles have multiple litters per year, and they are sexually mature when they are about 16 days old, so it's not easy getting rid of them. We used the mousetrap/flowerpot method for 3 years before eradicating them all...
It is more likely the squirrels when you plant bulbs you need to cover them with some chicken wire or other small mesh wire and the squirrels can't get to them. you will put the wire under the soil.
Even though I've visited Texas, I'm not familiar with the "critters" you have but up here in southern Ontario, we're usually coping with squirrels - they especially love tulip bulbs. However, they DO dislike daffodils so I no longer fight a losing battle by buying tulip bulbs! They have now moved on to someone else's tastier garden. 😊

The squirrels here will eat flower bulbs. They are particularly fond of red Tulip bulbs....I have had yellow Tulips last forever.

Probably a deer or raccoon or possum. Or a squirrel or chipmunk. Wrap the bulb in chicken wire before planting; I bet they don't like to eat that.
Could be voles.squirrels etc. Make a spray with hot pepper and garlic,apply blood meal,spray castor oil.
