My husband does not want to take the paper off and paint nor repaper. With today's new DIY trends, does anyone know of alternatives? This is in the kitchen and dining area.

You can put up shiplap walls on some of the walls, this is a new trend many people are doing. It seems pretty budget friendly, you just need to purchase wood slats, put them up and paint.
