Artichokes plants can be cut back to soil level at the end of the summer, or when the leaves begin to yellow. This will force new growth from the plant in the spring. Artichokes grow on stems and can be harvested just as the chokes (or flower buds) begin to open. Watch carefully; the green petals will begin to spread and you can harvest by cutting the stem one or two inches below the choke. Enjoy!

Our Growing season in Arizona is different. We are wondering when it is time to cut back our Artichoke plants as we do have yellowing leaves at this time and it’s June 2019z
