You have a pretty symmetrical space there! Definitely a good candidate for peel and stick backsplash tiles - you can buy them cheaply on Amazon! They have sooooo many different colors and styles.
DIY mosaic peal off tiles should do the trick.
I like the tiles that are reminiscent of the old tin ceilings. You can get them at Lowe's/Home Depot. They'd add a nice focal point in your kitchen.
