My go to crock pot recipe is: Pulled pork, but you can do chicken if you prefer.

Pork shoulder/but or Chicken breast, red onions, brown sugar and Barbecue Sauce (your choice)

Place the chopped red onions at the bottom of the pot. Place the meat on top. Layer the top of the meat with brown sugar then barbecue on top.

I leave on low cooking overnight, in the morning I shred all the meat and mix together. Leave on low till time to serve.

If for two people, just a small roast with vegetables. Buy pre-packaged roast seasoning...follow directions. Place meat and vegetables such as cut up potatoes, carrots, celery, onion. Let cook while driving and could be ready when you stop at location depending on hours. Very moist and tender. Be sure to place some sort of pan underneath in case you hit a rough spot on the road. Check for these issues regularly. But could just wait until you get somewhere and cook in morning or lunch time. Ready in couple of hours.

Rub beef brisket with brown sugar, chili powder, cumin, celery salt, garlic, and salt and pepper before smothering in ketchup, vinegar and Worcestershire sauce and then cooking for eight hours. I like this one very much!

I live by my crockpot! Cut up potatoes and carrots and put in the bottom of your crockpot. Place chicken pieces (leg quarters, legs, thighs, whatever kin you like) on top of the veggies. Season with your desired seasonings. Turn on low for 8 hours or high for 4. Chicken should be done but check first. The juice from the chicken will sink to the bottom to cook the veggies.

We like a chuck roast with a 12oz jar of pepperoncinis poured over it. About 6 hrs on low. Shred for sandwiches. So good.
