How can I redo a 64 year old fruitwood dining room set?

For stripping I would go with the Citristrip + Saran Wrap trick. It's great!

Possibly clean it very well with soap and water, just sand any areas that are extremely bad, wash off again. Then use chalk paint in any color you wish.. so much on internet on how to use it. Very little mess, dries quickly, covers beautifully.

I used the table from one set and the chairs from another to build my dining room set. They were both in need of updating. We stained the top of the table and painted the bottom....same with the buffet. If you don't want to go through the mission of striping and sanding, then I recommend chalk paint.
As long as you love the ship lap look go ahead and make a ship lap table. The boards can easily be attached to your existing table top. In long run it would probably be less work than sanding. Attach the boards with liquid nail and clamp until dry. You can paint with chalk paint but I would recommend using polycrilic vs wax as you do with normal chalk paint application. This will stand up better to the abuse a table takes. Chalk paint can be much less expensive if you mix your own and it is very easy to do. Good luck and hopefully you share pics with us.
Sherri, I feel your pain. I find doing this stuff a challenge due to some physical restrictions. I now do things in stages. Whatever I do, I do one section at a time. No all day projects anymore; a few hours at most and then a few hours the next day. I get things done! Now, I happen to love the color of the china closet - it goes with everything. As to the table and chairs, why not spray paint the table and chairs a color that compliments the china closet or the back of the china closet color, if you choose that route? I once doubted spray paint on wood furniture, but I've seen it done and it looks great.
By the way, ship lap is very trendy and will be out dated sooner rather than later.
