Just pick a vine and pull off. While it looks pretty to have them grow up the side of a building, they can also cause damage. If you are not trying to save the plant, just start pulling. If you are trying to save the plant to move or train on a trellis, pull gently so as not to break the vine and work in sections to loosen.
I will add to Naomie Moore's comment - be sure you find and remove the plant/source or they will continue to grow.
I would spray them with a weed killer and let them die off before removing. Reason being, live vines entwine their tendrils in every direction to tale hold. Pulling a live vine off could loosen or pull off your siding. Try to be patient as they die off and absolutely locate the source and remove or relocate.
