What you need to do is make your plants unnatractive to your dog- for example, you can spray vinegar around the plants, she won't like that and she'll stay away.
You can also make it uninviting- sprinkle some pointy ( not pointy enough to hurt just to be uncomftorable to walk on)rocks around your plants to keep her from hanging out around them. Good luck!
Sounds like she's lonely. Dogs are pack animals. You can let her in at night or get her a companion. What I did to keep my pets out of our garden is put up a fence with a gate. You can get in and out. Keeps pets out.
Why is she outside late at night? And alone in the yard for much of the day? It sounds like she needs at least two long walks a day and more attention.
Dogs dig when they are bored and have too much energy. Walk her at least an hour or day or hire a dog walker. Doggy day care is also an option.
I have used hot sauce in water successfully to keep dogs away from things I don't want them to destroy. I have used it on furniture too, when we had a puppy that loved to chew on antique table legs. Didn't take long to stop doing it. Your dog is still really a puppy, She may think it is a way to get attention since she has been doing it a while and knows she is scolded when she does it. A companion may help, but it is hard to tell if it now has become a habit and may pass is on to the companion. Please find your puppy a friend after you are able to stop the behavior. Try the hot sauce. If you have to, paint the straight hot sauce on the pots, but not on the plants, make sure that is diluted. Our family has four dogs, the only time they are separated is at night when my son takes his two dogs to his room and I take the ankle biter to mine, and the chow has the run of the house and backyard. She is an outdoor lover and likes to sleep on the back steps. We always have a doggy door leading to the back yard.

Nicole, my dog is not alone, we have 3 dogs and They play all the time and she gets a lot of attention from us too. We live in the caribbean and we have a big yard.

Nancy our dogs love to be outdoors too. That's why they are allowed to be outdoors at night.

Dogs dig for a reason most of the time. They are bored or trying to beat the heat. You could use chicken wire around plant with an inch or two of dirt over it.
