You can buy lace and apply it to the window with liquid starch and water..it gives you privacy and still keys light in
Why not try window film? You can find it in many varieties - solid, "frosted", patterned. If you don't like it or get tired of it you can always change it.

I bought this house which has wooden plantation shutters on the sliders to the deck.
They do make verticals from stiffened fabric, and if you have a chain connecting them across the bottom they don't move or rattle as much.
Give curtains a chance. If you choose a washable fabric, you just toss in the washer as needed and are low maintenance as you will get.
My DDL put drapes with grommets on her sliders....so easy to open and close.
Have blinds that will clear the top of the doors. Or use blinds or curtains you can draw aside while in . use.
