Keep cake part of upside down down cake fluffy

The first two days after making a pineapple upside down cake, the cake part is light and airy. As time goes on. The moistness of the pineapple saturated the cake till it is too soggy. Any ideas?

    It's only natural for the cake part to absorb any juices from the pineapple. In most homes pineapple upside down cake doesn't last long because it gets eaten. Are you using fresh or canned pineapple? I suggest canned because you can drain and dry it well and it won't produce as much juice when baked. Fresh pineapple will have a lot of juiciness that will penetrate into the cake. With canned pineapple, drain it well (I used to put it in the strainer overnight), then pat as dry as you can with paper towels. Do the same with the cherries if you are using them.


    Maybe it's your recipe??? Try the extra drying first and if that doesn't work, do that again but use a different recipe. This recipe claims to stay fresh for 5 days.

    No upside down pineapple cake should linger that long without being devoured.

      Well it's chocolate cake that doesn't last long in our house. Pineapple upside down cake lasts a wee bit longer!!

  • Store the cake fruit side down. Have you tried making them in oversized muffin tins? They turn out pretty well. That way you can wrap up and store in fridge. Some say you can freeze, but to me the pineapple gets a funky texture when freezing.

    • So welcome! If stored in fridge, just take out while preparing dinner - will be room temp by the time you have finished your meal. I do muffin tins as I live alone and an easy way for me to enjoy and give away to friends and neighbors. Makes the baking worthwhile. 😍
