It doesn't matter what zone you live in when it comes to keeping seeds! Put your seeds in the freezer and they will be ready for planting when the time is right!

I can take my tomato seeds and smear them on a brown paper bag to dry out. When dry...thento a mailing envelope with label as to what fruit is in it. Some will ferment the seeds.
i would do do an individual google on each type of seeds you want save.
What is you question? I too am zone four. When the plants seeds are ready to fall, gather them up and put on something to completely dry. Label it as to what the seeds are. When they are completely dry, bag them up and keep in a cool dry place until you are ready to start inside or plant in the garden next spring when the soil condition is right. Make sure the seeds are dry or they will mold over the winter and you won't be able to use them. If the seeds are from a hybrid plant you most likely will not get the same exact plant the seeds came from.
I keep my seeds in the refridgerator in the egg area or a drawer wrapped in a freezer bag. I was told that it simulates winter temp and does not freeze them. Works well for us as we are zone 4 - 5.
