Not a surprise, unfortunately. Ask 50 people and get 50 answers. Some use pallet wood, some like reclaimed wood, some use pre cut lumber from a home improvement store. If at all possible go to a real lumberyard, not a home improvement store. Google to find one in your area, they are a wealth of information. Here are some links to guide you along. Sounds like a great project, have fun!

I was able to find some nice pictures by just searching for "shiplap". Unfortunately I don't see a way to attach photos here. Shiplap is vertical "one-by" boards that have had a bit of the face removed on the left side and the same on the back of the right side so the boards overlap, keeping the observer from seeing what is behind the boards. This is an easy router project.
'Scuse me. Photos I am seeing apply the boards horizontally rather than vertically. Same joint.
Amazon sells some hardwood shiplap appx 134.00 for 20 sq ft. They also sell some peel and stick as well as shiplap wall paper. But as the other poster said you can make it yourself from old wood/pallet wood etc. You can also use plank flooring, like pergo or the luxury vinyl snap together plank flooring just depends on the look you want.
Use reclaimed wood. Your local salvage yard is always a good place to look.
Reclaimed wood is a good choice. Try your local salvage yard
