Are you talking about a shiplab type application? If you are, you might consider flooring.
Beadboard is very nice and can either be left natural or painted white. It has a very New England kind of feel to it. Beadboard comes in strips that are thin and will conform to the ceiling's idiosyncracies.
Bead board, birch-faced plywood, pallet wood, cedar, tongue and groove pine.
Go all Joana Gaines on that ceilings and use shiplap. Paint or stain as you wish.
