Is your concern is what to do with extra ginger? If so, cut it up into 1 in. and freeze them.
Just Google "ginger recipes" or "clove recipes" and then see what appeals to you. I love fresh ginger, but not everyone does. Same with cloves. Just experiment till you find what you like. Anything you need is a simple Google search.
You peel the brown skin off a portion of the segment, then slice really finely, then slice those into thin pieces, and cross cut again. Don't add alot when you first begin using as it is really potent. You can buy ginger ground up in a paste thats really good and easy.
You usually add the garlic, ginger and spices in your pan and toast in a bit of oil to make it fragrant, it will burn if the heat is too high. Then start adding your vegetables using the ones that take the longest to cook first. Cut your veggies on diagonal slices or matchstick size and they heat faster.
