Do I need to remove varnish/shellac from my solid oak claw foot table

Table n chairs are 40 - 45 yrs old and really need to be refinished. I would like to paint them. Also need help on type of paint to use. Chairs have the pressed back design and I really like what a DIYER did to her chairs. Don’t have a picture at present but will make one if needed.

yes, you need to remove the old. There is some stuff that when you pput it on the table it will bubble up and then you can wipeit off. Home Depot has it.
The paint will not adhere to stain.

If you are going to paint them, no. Sand down any imperfections which will also provide some tooth for the paint and prime.
Chalk paints tend to fill in designs, so avoid them. I'd spray paint the pressed backs to give them a light coat that gets into the nooks and crannies without filling in the design too much. Certainly, you can hand paint them and be very careful about doing the designs.
Rustoleum works really well for this kind of project although some people have used an interior paint on wooden furniture. The paint should be sealed with a polyurethane to protect the finish from spills and other thrills. Usually people will do 2-3 coats of poly.
Sand between coats for the smoothest finish. And if you are going for gloss on the poly, you can use matte spray paint. In fact, it makes it easier to see what you've done.
