Sand really really well and use linseed oil.
I would use a number of coats of clear polyurethane. It is very durable and lasts forever. I have a claw foot table that my dad refinished over thirty years ago. He always used polyurethane to finish and it still looks like it was just refinished.
First you need to "season" your slab if not already done so. I would use a marine type varnish, make sure it states "non-yellowing" on the container.
