One more little note, please. After blanching for the time needed for your lima beans, or whatever produce you have at the time, you will then remove from the boiling water and immediately plunge the basket and vegetables into a sink of cold water and ice. Allow to chill all the way before freezing. Chilling stops the cooking process, helps maintain the nutrients and the natural color.
