You don't know what sort of critters may be still hiding in the fibres, and what sort of unhygenic gunk they have been exposed to. When brought indoors, the lumber will often begin to emit an unpleasant smell. Do you really want to put your bedding on, and to be sleeping in this bed?
It will be challenging enough to constuct a strong, level, fitting, and smoothly functioning murphy bed starting with new lumber. Pallet wood cracks and splits when pulled apart, is rough, dirty, unlevel and warped.
