Easiest and quickest? Hire someone else to do it.
You don't say what the state of the stairs are now. Stained? Painted?
You've got to sand and scrape if you want to take it back to wood, then stain and put on 2-3 coats of poly.
Painting hides a great many ills-- wood filler, different woods-- and with a little prep of washing and sanding, painting can make them look prettier in minutes.
