Ask a carpenter, or construction company. You should be able to take things out...not sure about putting back in...maybe start with different cabinets & counter tops?
All of your plumbing comes from under the home. You will need a plumber to change out, but it can be done. The wiring can be pulled through the walls just like in a home that is not mobile. Again, you should use a pro. I redesigned a mobile home. I removed most of the wall that was blocking an open concept. The wall became a pillar housing the air-conditioning controller and two electrical outlets. I then made a huge island between the living room and kitchen. Tore out the wall from the kitchen and the dining room and removed the upper cabinets. The island replaced the upper cabinets and then some.
You can go to one of the box stores with your kitchen measurements and have a design worked out for you. Good luck.
