I have seen some really nice results using artificial grass between pavers.
Unless the pavers are close together, the sand is messy. Sand never compresses like dirt does, it merely settles in with its mates. Unless you use edging your pea gravel will "migrate". Personally, I vote for edging and the pea gravel. Good luck with whatever you choose.
Sand can be used between pavers if you pound it in the first few times. Use a wooden dowel or narrow piece of wood, whatever fits between the pavers and has a flat surface. It takes a lot of work,but starting with damp sand and pounding it flat in layers will really keep the pavers from moving around while allowing drainage. Place strips of newspaper down first if weeds might be a future problem. The first rainy season, parts may need to be re-compacted a bit. It's a good job for an energetic teenager!
you can use polymeric sand. If put in properly it stops growth from occurring.
