Fall is actually the proper time to transfer. Before transplanting, you could purchase a product called Droughtshield. This product can be sprayed onto the foliage the day before you are going to transplant the trees. This product will reduce wilting and transplant shock by forming a protective thin polymer film on the leaf reducing transpiration for 60 – 90 days.
