you can stack them with wood shelves in between for nice and sturdy book shelves.

What can I do to Formica counter tops other than replacing them?

Stack them with the bricks. LOL... Find some Peel & Stick shelf liner. Use it to cover the Formica. And with SO many designs out there, I’m sure you can find one you’ll love.
