We have tongue and groove ceiling

We have tongue and groove ceiling in our Florida room. We want to put up something different. Can we put up another “flooring” for a ceiling right over top of the t&g? Is there any special type we need or could use such as laminate, hardwood, etc.? Has anyone done this?
