If there are bare branches in the middle there could very well be more than one issue. Drought will cause dying of branches,insects ,improper fertilization. How old are the cypress and what have you done with them.
Yes they do, and will keep on growing taller and wider until they reach at least 35 foot. Best kept to a height and width you consider you can handle cutting twice a year....
