Easy way to add counter top space in kitchen minus total remodel?

My kitchen is set up so very unique with there being a bar teired down to my sink with maybe a foot and a half wide counter top on either side if sink . One end become the main support beam and the other goes to sound wall that then holds my oven and an additional 3 ft. counter space. That's all I have for counter top because then there sits my fridge. I'm single mom of three kids who can't just tear down two remaining walls full of windows. I'm trying to come up with a eye pleasing and easy way to have more counter top in my 10x8 ft. Kitchen. Any ideas helpful even if it makes me out to be a tad blind to the obvious since obviously I'm not seeing a solution, heehee. Thank you :)

    Not having a sketch it is hard to visualize but it comes down to wanting more counter space, right? The solution I use is a table with wheels.

    Do you have room for a rolling island? There are some nice ones available. You can roll it out when you need it and hide it when you don’t.

    Or make one yourself from a thrift store table, dresser, or cabinet. You could put molding around the base or put casters on to wheel it around.
