Most people glue or lay the pennies down then pour the epoxy of the pennies. Often they have painted the background black to highlight the pennies. The only one I found that used grout, used epoxy grout:

This article has a section about grout - even though it's main discussion is putting epoxy over tile. Tile has grout so this applies.

I'm not a countertop or floor installer so I really don't know if it will work, but from what I've read I wish you hadn't used the grout. :( Maybe someone else will know more later.
