Hi Kit. You can put black edging in to keep the grass from growing into your flower beds. You pound it in to the ground. To keep the mulch in you can add field stones as a border.

Have them fix it,if they will not come back contact you local better business bureau and make a complaint against them

Have you contacted the "someone" that did the original work? There should be some amount of warranty time for the work performed. If for some reason that can't be done, then maybe you can post pictures of the "mistakes" then it would be easier to give some advice.
