Plaster it but expensive! Or using a steamer and once taken off never need to do it again.

I did a shiplap ceiling in my room I use for meditation..and its great. I love it. I got 3/8 pine sheathing..Lowes cut it into the strips I wanted for free. Then it was a matter of sanding and painting. Using a nail gun to put them up.

Or you can have your ceilings mudded...which is a mess.

  If its for a bathroom..seal it with a moisture resistant sealer...like minwax polycrylic. It dries clear and you can get it in a matte. Just use a good primer and a good sealer. I have shiplap in my kitchen on the back wall and around my fireplace..I love it and its still like when it was first put up. In the kitchen I did seal it..but in my room I did not, because in the kitchen it would be moisture and cooking grease and I can wipe over it to clean.
  
  I used really cheap stuff..it was like $13.00 a 4x8 sheet, Use a nickel as a spacer.
